August Goals
Wow. So much for those goals. That didn’t work out very well. Hopefully August will go much more according to plan.
All I want to follow is this:
No more than 1200 calories per day
Work out at least every other day
Fast food once a month
No more sodas
That’s it. I gained weight since I didn’t really follow any of my original plans. My current goal is pretty much to be my weight at the beginning of July by the end of August.
Tuna
So I go through phases where I just can’t get enough of something and (almost) see nothing wrong with using it on a regular basis. I’ll wear the same skirt more than once in a single week. Watch the same movie every day. And now I’m going through a phase of having tuna for lunch on a daily basis. I just made my third batch. It probably doesn’t help that my first batch was so amazingly delicious. I’m starting to wonder, though, if it was a result of not having had tuna in such a long time, or if it really was so delicious. My later recipes just haven’t been as good. Anyway, it’s still pretty tasty! It’s a family recipe that really just has ingredients and you pretty much just add everything as you go. So. Here’s the recipe:
Tuna (in water)
Light Mayo
Pickle relish
Diced celery
Diced onion
Chopped green olives
Diced jalapeno peppers
Yum. So delicious. Just mix all that together! It’s amazing! I think I calculated it out and it makes about 5 cups worth that is all less than 2000 calories. Considering it makes about 10 servings, I feel like 200 calories per serving isn’t too bad, right? Of course, I’m still new to this calorie counting business, but still. You should definitely try it out sometime. So. GOOD!
July Goals (because goals are always good…?)
1. Work out every other day, minimum.
2. Cut sodas out of the diet.
3. Never eat out as “a last resort”. It only leads to bad things. (AKA fast food and other grease)
4. Take part in at least one class at the gym.
5. Lose 10 pounds. (I’d like to say more, but that maybe not be realistic.)
Note: Today’s weight is 193.4 lbs. Hopefully it’ll be around 184 on August 1st!
Note to self
Don’t worry about what others think!
My coworkers always judge me when I’m trying to eat healthy. They always make snide remarks when I say things like: ” Oh. No, thank you. I don’t want any candy.” or “Oh. No, thank you. I don’t want any chips. I brought carrots in to work today.” They always make snide comments and I allow them to affect me. No more! I just need to remind myself that they’re jealous of my pursuit of having a healthy lifestyle and their lack of self control and discipline necessary to make the first steps. No more! Effective immediately, I will no longer allow others thoughts and snide comments to have any sort of influence on me.

If I can make an amazing breakfast in 10 minutes or less, I’m happy all day. If it’s healthy, that’s even better. Filling? Even better. And guess what! What you see above is fast, good for you, and sustaining. It also features one of my new favorite ingredients: Greek yogurt.
In all honesty, yogurt gives me the creeps. No matter if it is made with soy or regular milk, I can’t get over the texture. The lumpiness. Even the ones with the fruit mixed in have this “ick” factor for me. So, when I saw Stonyfield Farm’s OIKOS at Wegmans this weekend, I was skeptical. However, I keep seeing it pop up on other blogs, so — being the adventurous foodie I am — I had to give it a try.
I’m now in love with the higher-in-protein, lower-in-sugar stuff (and did I mention it’s only 80 calories with 0 fat?). The texture is FAR better than regular/soy (rich and creamy). And with all the different uses (you can substitute it for basically EVERYTHING), I have a feeling OIKOS will become a long-term resident of our refrigerator shelves.

GREEK YOGURT WITH GRANOLA AND PEACHES — for two
What you’ll need …
- 2 containers of plain greek yogurt
- 2 ripe peaches, cut into slices
- 1/4 cup steel-cut oats
- 1/4 cup raw crushed walnuts
- 1 tablespoon maple syrup
- 1/2 tablespoon coconut oil
- 1 teaspoon ground cinnamon

Method …
- Preheat your oven to 300 degrees F. Top a cookie sheet with a piece of parchment paper. Set aside.
- With a fork, whisk together the maple syrup, coconut oil, and cinnamon. Pour this mixture over the walnuts and steel-cut oats. Toss with your fingers until crumbly.
- Put this granola mixture in the oven for five minutes, then drop the heat to 280 degrees F, stir around, and bake for another 5 minutes. The walnuts will deepen in color.
- Remove from oven and let cool for a couple minutes — while you put the slices peaches in two bowls. Top with the yogurt. Then the granola.
- This breakfast is also a great one to bring to work. Or just made for one. I recommend making the granola in the larger batch so you have it for more than one day

New Goals Tuesday (even though it’s Monday…)
I didn’t stick to anything even close to what I wanted to over the weekend. I was hoping to get back in town and workout and eat healthy, but excuses excuses and so first I was exhausted and hung over yesterday. Today I’m still exhausted after a long weekend of camping, tubing, and laying out in the river. However, I’m working out tomorrow. I may regret it since I bet my sunburn will still ache a bit, but it’s going to have to be done. I’m hoping it’s feeling better by the time I get off of work tomorrow even though it’s still very sensitive. I have pretty fair skin (read plenty of freckles) and burn pretty easily and often. I just enjoy being outside too much to hold off. I haven’t been outside much recently since I wasn’t happy with my weight (another reason I want to get this under control) so I was extra pale.
Does anyone have any thoughts on working out with a sunburn? Good idea? Bad idea? Not as bad as it sounds? Ways to make it not quite so painful?

I haven’t tried this recipe yet but it looks pretty simple and super delicious. I found it on the (never home)maker blog—> A blog I’ve recently started following on Google Reader. They seem to have good recipes as well as stories about races which help keep me motivated to workout and eat healthy!
Whataburger is my weakness. That and Chipotle. Sometimes I wish I was in an area again that didn’t have Whataburger. It’s much easier to avoid temptation when it’s not always surrounding me. Also, I learned this weekend that it’s difficult to eat right on road trips and when camping when the meal planning is done very last minute. And, apparently, I don’t like cottage cheese. I’m going to need to do much better research for eating healthy. I feel like it’s just the type of thing where you need to get prepared much sooner. It’s not the type of thing you can throw together, you know? Oh. And cutting back on drinking is a must!
Goals
I should probably have some. So. Here we go.
1. Weight: 135 lbs
2. Pant size: 8
3. Work out at least every other day for an hour
4. Eat much more veggies and fruit
5. Cut down on alcohol consumption
6. Cut down on sodas and energy drinks (no more than twice a month)
7. Cut down on fast food (no more than once a month)
8. Consume leaner meals
9. Cut down on sweets
10. Start playing sports more (especially soccer and maybe swimming)
This is all I can think of, for now. I’m sure there’s more I should have, but this is a start. A friend referred me to SparkPeople so I’ll check that out.
How do you locate a place that will teach you to row and allow you to row on the weekends?
Side note: Another reason I wanted to start this is one side of my family has almost all been diagnosed with diabetes (or probably has it because they’re obese but won’t get checked out) and has several health problems. If I don’t start maintaining a regular healthy lifestyle now, then I may ruin my chances later on down the road.
